This is one of our favorite Italian meals. This is so easy too!
Ingredients
- 1/3 cup (1 1/2 ounces) grated fresh Parmesan cheese, divided
- 1/4 cup dry breadcrumbs
- 1 tablespoon minced fresh parsley
- 1/2 teaspoon dried basil
- 1/4 teaspoon salt, divided
- 1 large egg white, lightly beaten
- 1 pound chicken breast
- 1 1/2 cups of your favorite pasta sauce
- 1/3 cup (1 1/2 ounces) shredded provolone cheese (we have also used swiss and parmesan)
Preparation
Preheat oven to 400 degrees.
Combine 2 tablespoons of Parmesan, breadcrumbs, parsley, basil, and 1/8 teaspoon salt in a shallow dish. Place egg white in a shallow dish. Dip each chicken tender in egg white; dredge in the breadcrumb mixture. Spray a baking pan with oil and place chicken on the pan and bake for 25 to 30 min or until chicken is done all the way through.
In the mean time heat up your pasta sauce and prepare your cheese. Take chicken our of oven and top each breast with pasta sauce to your desire amount. Place cheese on top of pasta sauce and put back in oven for 1 to 2 min. Once cheese is melted...gobble it all up Enjoy!
